# Mum's Fruit Salad

> The fruit salad that puts all others to shame. Three rules, no compromise: at least **5 different fruits**, all fresh, and cut into **small pieces**. That last point is everything. Yes it takes longer. And yes the result is nothing like the big soggy chunks you find everywhere.

## Ingredients

- 5 pc Peaches
- 3 pc Pears
- 3 pc Apricots
- 1 pc Mango
- 150 g Strawberries
- 80 g Raspberries
- 1 pc Pomegranate
- 1 pc Orange (freshly squeezed juice)
- 2 pc Passion fruits
- 0.5 tbsp Caster sugar

## Method

1. Peel and **stone or core** the peaches, pears and mango. Cut them along with the apricots and strawberries into **small cubes of about 1 cm**. Even-sized if possible.
   _Tip: This step makes all the difference. If you think it's small enough, cut it one more time. No large chunks: that's the rule._
2. Cut the pomegranate in half and tap the skin with a spoon over the bowl to release the **seeds**.
   _Tip: Do this over a deep bowl and protect your clothes: pomegranate juice stains absolutely everything._
3. Combine all the fruits in a large bowl. Add the **freshly squeezed orange juice**, the **passion fruit pulp** and the sugar. Stir gently. Place the raspberries **on top last** without mixing them in.
   _Tip: The sugar isn't there to sweeten: just to draw out a little juice from the fruits. With good ripe fruit, half a tablespoon is more than enough. Raspberries go in last so they don't get crushed._
4. Cover and refrigerate for at least **1 hour** before serving.
   _Tip: A few hours in the fridge is even better: the juices combine and the flavours really develop._

## Tips & variations

**Fruits that work well** in addition to those in the recipe: blueberries, redcurrants. Pomegranate is a perfect ally in winter when summer fruits aren't available.

**Fruits to avoid**: bananas (they take over everything), whole citrus (stringy texture), too much apple (too crunchy), pineapple (texture doesn't fit), grapes (too big for the fine-cut approach).

The recipe is fully adaptable to **seasonal fruits**: keep the three principles (5 fruits minimum, all fresh, small pieces) and compose with whatever you find.

The salad keeps in the fridge for up to **24 hours**. Beyond that, some fruits start to release too much juice.
